
I really enjoy the flavored coffee creamers available in any store in the US. However, Mexico is not a big coffee drinking country. Finding good, whole bean, real coffee is difficult, so I was not surprised my search for flavored coffee creamers was absolutely fruitless. I was faced with the choice of no creamer (oh no!) or coming up with my own, so of course I devised my own.
Ingredients:
1/2 c sweetened condensed milk1/3 c cream
1/3 c milk
1 tsp vanilla
Preparation:
Combine all dairy ingredients in a pan and bring to a low simmer of medium heat, stirring occasionally. Remove from heat and add vanilla. Pour into a small covered pitcher and refrigerate. Will keep up to two weeks.
Cook's notes: You can use any extract you want. There is a fancy baking store downtown that carries all kinds of extracts, and I will probably get around to trying them eventually. Right now, vanilla is working just fine for me.
