
Ingredients:
1 cup all purpose flour1 cup corn flour
4 tsp. baking powder
1/4 tsp. salt
2 oranges
milk
1 egg
1/3 cup honey
3 tbsp oil
Preparation:
Preheat oven to 200°C (400°F)
In a large bowl, mix together flours, salt, and baking powder. Set aside.
Juice the oranges. Add enough milk to the orange juice to equal 1 cup. Whisk in the egg, honey, and oil.
Pour the juice mixture into the flour mixture and stir just until blended. Divide batter between 12 muffin cups. Bake for 25 minutes.
