Tuna Carpaccio Bruschetta

It's summertime again, and this year it is sizzling like never before. It's time for recipes that are easy, don't require actually turning on the stove, and are cool and refreshing to eat. This one fits the bill, and, as a bonus, it's really tasty, too.

Ingredients:

1 lb high quality tuna loin
½ cup lime juice
¼ cup soy sauce
¼ cup olive oil
¼ cup sliced green onions
3 tbsp. capers, drained
2 garlic cloves, minced
1 brick cream cheese
200 grams queso fresca

Preparation:

Cut tuna loin into thin slices. If your slices turn out a little thick, you can lightly pound the slices to make them thinner.

Whisk together the lime juice, soy sauce, olive oil, green onions, capers, and garlic. Pour over the tuna. Marinate in the refrigerator for 30 minutes.

Slice the baguette on the bias into 1/4 inch slices. Mix together cream cheese and queso fresca and spread on the bagutte slices. Top each slice with a piece of tuna. Serve.

Cook's Notes:This tuna is also really good atop a green salad.
Serves:about 25 pieces
