Quesadillas de Camarones

Quesadillas de Camarones is sort of coastal Mexican comfort food.

Saute some medium sized peeled shrimp with chopped tomatoes, onions, cilantro, garlic and spices and set aside to let the sauce thicken.

Make a normal quesadilla but when the cheese starts melting put a spoonful or two of the shrimp and sauce over top the cheese, fold and heat through.

What we had for supper tonight.  :)

Yum.  We do an "assemble-it-yourself" variety here at our house.  We melt chihuahua cheese with shrimp under the broiler, then serve with a stack of fresh tortillas.  So tasty and simple.
