Hush Puppies

I do not recommend this recipe if you live anywhere you can get actual corn meal. But if you live here in Mazatlan, where corn meal is absolutely not to be found, then this recipe will satisfy your craving and goes great with battered fish.

This recipe will make the dense type of Hush Puppies like you get at Long John Silver's, which is what I like.


Ingredients:

3/4 cup corn flour, the kind used to make tortillas
1/2 tsp. baking powder
1 egg
1/4 cup milk

1/4 tsp. salt
or
2 tbsp. sugar
Depending on whether you prefer a sweet or savory hush puppy

Preparation:

Heat 1 inch of oil in a skillet to 350°F.

Mix together egg and milk in one bowl and flour and baking powder in another. Pour egg mixture into flour mixture and stir until incorporated. You should have a stiff mixture that you can roll with your hands.

Roll dough into 1 inch balls. Place balls in oil and cook until dark, golden brown, turning once.

Serve.

Cook's Notes: If you make the savory variety, try adding garlic, finely diced onion, finely diced jalapeno, or shredded cheese.
